Holy Yum Chicken

I found this recipe on Pinterest and it was really yummy! 


2 1/2 - 3 lbs chicken
1 cup Dijon mustard ( no substitutes )
1/2 cup PURE maple syrup ( the real thing - no Aunt Jemima garbage )
2 Tbsp Rice Vinegar
1/2 tsp salt
1/2 tsp pepper
* Mix all together.  Place chicken in a greased cake pan.  Pour sauce over top and roll chicken around so all of it gets covered.  Cover with foil and bake on 375 for about 40 minutes or until cooked.  Remove the chicken from the pan and plate it.  Then immediately add:

2 Tbsp of Cornstarch or more if needed
*Whisk cornstarch into the sauce while the sauce is still piping hot.  This must be done while the sauce is really hot.  It will make it nice and thick.  Add some rosemary to the sauce and pour over top of chicken.  This will feed about 6 people.
